Healthified Salisbury Steak

Ingredients


  • 2 tsp oil

  • 1 cup onions, minced

  • 1 lb ground beef

  • 1 lb ground turkey

  • 1/2 cup panko breadcrumbs

  • 2 large eggs

  • 2 cups beef broth

  • 1/4 tsp salt

  • 1/8 tsp ground black pepper

  • 8 oz button mushrooms

  • 2 tbsp flour

  • 2 tbsp tomato paste

  • 1 tsp red wine vinegar

  • 2 tsp Worcestershire sauce

  • 1/4 cup water

Instructions


  • Heat oil in large (very large) skillet over medium heat. Add onions to skillet and cook until tender – about 5 minutes. While onions cook, remove ends from mushrooms and slice them. Put mushrooms aside. Then, remove onions from heat, and put those aside as well.

  • In large bowl, combine beef, turkey, panko, eggs, salt, pepper, 1/2 of the onions, and a 1/4 cup of the beef broth. Mix until combined.

  • Remove mixture from bowl and shape into 8 equal size balls and then flatten into a patty.

  • In the same skillet, add the patties and cook on each side for about 2-3 minutes or until brown. Remove from skillet and put aside.

  • Place sliced mushrooms in skillet and saute until mushrooms begin to tenderize. Add the patties back into the skillet on top of the mushrooms.

  • In a separate bowl, put the flour, broth, onions, tomato paste, vinegar, water and worcestershire together and stir until semi-smooth (or until flour chunks have dissolved). Add the mixture to the skillet and stir.

  • Cover the skillet and simmer for 15-20 minutes, stirring occasionally.

  • Serve & Enjoy.

    Nothing is better than some good 'ol comfort food!

    Not that my mom every made Salisbury Steak (sorry mom – being honest), but this is something that screams home cooking.  I found this from Skinny Taste – love her!! She lightened her version up a bit…I might have made it a little heavier. Regardless, it is still lower in calories than the original and it tastes amazing. On a cool winter day, this really hits the spot! But do save this tasty dish for the weekend, as it takes just a little bit of time to prepare.
