Cucumber Salad – A Fresh and Light Recipe

Ingredients


  • Salad

  • 6 large cucumbers, skin removed and sliced thin

  • 1 medium tomato diced

  • 1/2 medium onion diced

  • 1 Tbsp salt

  • Dressing

  • 1/2 cup cider vinegar

  • 4 Tbsp sunflower oil or canola oil

  • 2 Tbsp honey

  • 1 tsp celery seed

  • 1 tsp dried basil

  • 1 tsp ground mustard

  • 1 tsp garlic powder

  • 1/2-1 tsp salt (to taste)

  • 1/2 tsp dried oregano

Instructions


  • Put sliced cucumbers in a strainer and toss with 1 Tbsp salt. Let stand for 30+ minutes. This draws all the water out of the cucumbers, so put it on a plate and store in the fridge so the cucumbers stay cold.

  • In a large bowl, combine diced tomatoes and onions.

  • In a small bowl whisk together all the dressing ingredients. When you are ready to serve add the cucumbers to the tomatoes and onions and toss with dressing.

    I love cucumbers! They are one of my favorite veggies especially during the summer. My mom would always made this awesome cucumber salad with sour cream, vinegar, onions, and dill (see below for that recipes). I remember I would eat the entire batch in one sitting sometimes. It wasn’t the best idea in the world, but it was hard to stop once you started. It is still one of my favorite salads to make in the summer, but sometimes we need to branch out and try new things. I have heard fantastic reviews on this salad, so I thought it was worth a shot.

    Okay, and I promised you my mother’s cucumber salad recipe as well, didn’t I? Well, here it is:

    Ingredients:

    4  large cucumbers, peeled and sliced
    8 oz container of sour cream
    1/2 red or white onion, sliced
    4 tbsp of vinegar
    4 tbsp of dill weed
    2 tbsp sugar (optional)

    Directions

    Mix all ingredients in large bowl, cover and let sit in fridge for at least 2 hours. Serve cold.
