Cheeseburger Casserole – Freezer Meal

Cheeseburger Casserole – Freezer Meal

Ingredients


  • 8 oz rotini pasta

  • 2 tsp vegetable oil

  • 1.5 cups onions, chopped

  • 1 tsp minced garlic

  • 1 lb ground beef

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 2 tbsp tomato paste

  • 2 cans (14.5oz) of diced tomatoes with seasonings

  • 2 tbsp Dijon Mustard

  • 2 cups sharp cheddar cheese, shredded

  • 1/4 cup dill pickles, chopped

Instructions


  • n large pot of boiling water, cook noodles to package directions.

  • As noodles cook, put large skillet over medium high heat and add the oil to pan.

  • Once oil is hot, add onions to pan and cook until tender, about 5 minutes.

  • Add the garlic and the ground beef to skillet and brown the meat. Drain any excess grease from pan and then season the meat with salt & pepper.

  • Add the tomato paste, diced tomatoes, and mustard to pan and cook for about 2 minutes or until thickened a little bit.

  • Drain the noodles and mix them in with the meat mixture until completely covered in the meat and sauce.

  • Spread into a 9X13″ baking pan and top with cheddar cheese.

  • When ready to bake, preheat oven to 350 degrees and bake about 30 minutes or until warm throughout. Sprinkle the chopped dill pickles on top of the casserole.

    You don’t work in fast food for over ten years without having a love of cheeseburgers. To this day, I still feel like their food is home cooking to me, and it’s normally my first choice if we need a quick bite to eat. Some people may not feel that way after working somewhere for so long, but I still can’t get enough of it. With that being said, when SkinnyTaste (She’s one of my favs!!) had this post for Cheeseburger Casserole I figured I give it a whirl. I’ve made this oodles of times, and realized it would be perfect to throw in the freezer, so I did just that.

    To prepare this as a freezer meal, follow all steps up until #7. At that point, cover with tinfoil and freeze for up to 6 months. Remove from freezer the night before and let thaw in refrigerator.
